Tahini is one of the oldest and most beloved ingredients in Mediterranean and Middle Eastern cooking. It’s simple, it’s natural, and it’s endlessly versatile. But what exactly is tahini, how is it made, and why does it deserve a permanent place in your kitchen? Let’s explore.

What Is Tahini?


Tahini (sometimes spelled tahina) is a smooth, creamy paste made from ground sesame seeds. That’s it - just sesame seeds, roasted and ground until they release their natural oils and transform into a rich, pourable paste with a distinctive nutty flavour.

Think of it as the sesame equivalent of peanut butter, but with a more delicate, earthy character that lends itself to both savoury and sweet dishes. The word “tahini” comes from the Arabic ṭaḥīniyya, derived from ṭaḥana, meaning “to grind.” And grinding is precisely what gives tahini its signature silky texture.

Tahini, Tahini Paste, Sesame Seed Paste - What’s the Difference?

Walk through any supermarket and you’ll see these terms used interchangeably, which can be confusing. Here’s the simple breakdown:

Tahini / Tahini paste

These are the same thing. Mostly, pure ground sesame seeds with no added ingredients. “Tahini paste” is simply the full name; “tahini” is the shorthand.

Tahini sauce / Tahini dressing

Tahini paste thinned with water and lemon juice (and sometimes garlic or salt) to create a creamy sauce. This is the drizzle you’ll find on shawarma, falafel, and grilled vegetables.

Sesame seed paste

Another name for tahini. Some East Asian sesame pastes are made from toasted, unhulled (darker) seeds and have a stronger flavour, so always check the label.

How Is Tahini Made?


The best tahini starts with the best sesame seeds. Humera seeds are prized for their rich, buttery flavour and high oil content, and the process is beautifully simple:

Roasting

The seeds are gently roasted to develop their nutty, aromatic character. The low roasting temperature and time make a real difference - it’s where quality tahini gets its depth of flavour. You may notice an overpowering bitterness in lower-quality tahinis, where the heating process has been too harsh; a shortcut that prioritises speed over flavour.

Cleaning

After roasting, the sesame seeds go through a final cleaning stage to remove any dust, broken seeds, burnt particles, or other unwanted materials. This ensures that only clean, high-quality sesame seeds move on to the grinding process, helping to produce smooth, premium-quality tahini.

Grinding

The roasted seeds are stone-ground or milled until they break down into a smooth, flowing paste. Quality tahini is ground slowly, at low temperatures, to preserve the natural oils and nutrients. In order to get the best consistency for our sauce ranges, we thrice grind the seeds for the ultimate silky smooth finish.

Jarring

The finished tahini is packed without any additives, preservatives, or stabilisers. That’s why you’ll sometimes see a layer of oil sitting on top - it’s completely natural. Just give the jar a good stir before using. Or if using one of our Tahini Sauces, a quick ‘Shake to Wake’.

🌿 Med Cuisine Tip: A thin layer of oil on top of your tahini is a sign of quality - it means nothing artificial has been added to prevent separation. Stir it back in and you’re good to go.

Light / Natural Tahini
