Sumac

FLAVOUR: Bright, tangy, fruity - like a lemony sprinkle of sunshine.

Ground from the dried berries of the sumac shrub, this deep-red powder is one of the most distinctive Middle Eastern spices. Aleppo Pepper

FLAVOUR:  Mildly spicy, fruity, with a hint of sun-dried tomato.

Named after the Syrian city, Aleppo pepper flakes offer gentle heat with complex, fruity undertones. It’s far more nuanced than standard chilli flakes and is used as a finishing spice across Levantine cooking.

The Essential Spice Blends

Za’atar

WHAT’S IN IT:  Wild thyme (or oregano), sumac, toasted sesame seeds, salt.

Za’atar is arguably the most iconic Middle Eastern spice blend. It’s sprinkled on flatbreads, stirred into olive oil for dipping, rubbed onto meats before grilling, and mixed into labneh.

Baharat (the Arabic word simply means “spices”) is the all-purpose seasoning of Middle Eastern kitchens. It’s warm, aromatic, and deeply flavourful without being hot. Use it on roasted meats, in stews and soups, mixed into rice, or rubbed onto vegetables before roasting.

Hawaij

WHAT’S IN IT: A traditional Yemeni spice blend of turmeric, black pepper, cumin, coriander, cardamom, cloves, fenugreek, and salt.

Hawaij’s rich, aromatic blend makes it perfect for enhancing the flavours of soups, curries, and a variety of other dishes. It adds depth, earthiness, and a captivating aroma wherever it goes.

Shawarma Spice

WHAT’S IN IT: Cumin, coriander, turmeric, paprika, cinnamon, garlic, black pepper, and sometimes allspice or cardamom.

This is the blend that gives shawarma its signature warm, slightly sweet, deeply savoury character. It works beautifully with roasted vegetables or mushrooms, as well as chicken, lamb or beef. Mix with olive oil and yoghurt for a quick marinade.

Harissa Spice

WHAT’S IN IT: A North African blend built around dried chilli peppers, with cumin, coriander, garlic, and caraway.

Whole spices last longer — up to 2–3 years if stored properly.
