200ml cold water

30ml fresh lemon juice

1 small clove of garlic, crushed (optional)

Method

Pour the tahini into a bowl, add the salt, then slowly add cold water, stirring continuously. Then blend in lemon juice and garlic.

Don’t panic if the mixture seizes up and looks like it’s about to split, just keep stirring and it will come together into a smooth, creamy sauce. Keep adding water until you reach your desired consistency: thicker for dipping, thinner for drizzling.
